Why does every car these days have a starter button instead of a key-turn? It prevents you from turning the car off quickly.

Same reason they have HID headlights and leather seats: to make them seem worth more money.

Race cars have had starter buttons for years. Decades ago cars had starter buttons. The Honda S2000 has always had a starter button and it predated the Prius. I think the modern trend must have started with some luxury car or maybe a sports car.

No but the GenII and newer Prius needs it because the ignition is keyless. Since you're not inserting a key and turning it, and the key stays in your pocket, you need some way to start and stop the engine.

Yeah well race cars don't have passengers with idle hands and people who reach in and try to take your keys out of your ignition either.
